Good recs all, though I disagree with a few of the items being in the top ten category; they are the kind of disagreements that would no doubt lead to great and heated discussion. Among the many suggestions he has I was thrilled to see were to use more shallots. Yes! THE most underused onion in the home cook's kitchen (bountiful in the professional kitchen), and the most important one. And thank you David for you comments in that post on my book.
